Palina's Pimento Chz
8 oz. American Cheese, shredded
8 oz. reduced fat Colby/Monterey Jack cheese, shredded
8 oz. 1/3 less fat cream cheese, room temperature
3/4 cup low-fat mayonnaise
2 TBS. white vinegar
2 tablespoons sugar
4 oz pimento-mostly drained (may use more according to taste)
Combine all ingredients in either a food processor or hand mixer. This recipe is very light in texture making it ideal to serve with a whole-grain cracker of on a slice of double-fiber wheat bread. If you are entertaining you can serve this an hors d'oeuvres by measuring a teaspoon of the pimento cheese onto a cracker and top with fresh chives for a colorful and easy appetizer. Your guest will never know it is lower in fat!
Refrigerate immediately after mixing.
