PITTSBORO, Miss. (WCBI) – A staple of the Mediterranean basin grows just fine right here in Mississippi.

Rick Hegwood of Pittsboro is enjoying a bumper crop of artichokes.

It turns out that all the rain, and cooler temperatures, are perfect growing conditions for the edible thistles.

Rick and his wife own Pomegranate Nursery in Pittsboro.

They take a little bit of work to eat, but with some melted butter, artichokes are downright delicious.

Rick says, ” We were interested in new plants, and so these were rated to be able to be grown in our area and we didn’t know of anybody that was growing them, so we decided we’d like to try and see if we could produce some ourselves.”

Artichoke plants typically live for between 4 and 5 years.
