Video: MUW to Hit the Road, Raise Awareness of Healthy Eating

COLUMBUS, Miss. (AP) — The Mississippi University for Women will launch in the fall of 2015 a project to raise awareness of healthy eating.

Project CHEW (Cook Healthy, Eat Well) will take a mobile unit across the state to emphasize healthy ingredients and food preparation techniques. The unit will have a 24-foot fully equipped catering trailer with a demonstration kitchen.

MUW officials say the Culinary Arts Institute project will demonstrate that preparing healthy, nutritious meals can be done anywhere – even on the road from a food trailer.

The demonstrations will be held at high schools, community colleges, markets and festivals across the state.

Officials say the project will encourage the use of locally sourced food – from farmers’ markets – and emphasize the importance of fresh produce as part of a healthy diet.
