Video: Pig Cookin’ Competition Heats Up, Kicks Off SBW In Starkville

STARKVILLE, Miss. (WCBI) – It’s a big weekend in Starkville and it’s all kicking off today.

The annual Super Bulldog Weekend is always a time for friends, family and sports, but it wouldn’t be complete without a little friendly barbecue competition. The smell of barbecue fills the air as teams fire up their grills for the Barbecue Cooking Competition.

Teams come from around the state to put their skills to the ultimate test. This marks the 10th year for the Biloxi barbeque Team to compete.

“We started coming up right after Hurricane Katrina just to have something to do, to get away from the coast and enjoy ourselves a little bit, and we love Mississippi State and we love cooking BBQ, so we started cooking and we’ve been here ever since,” said Biloxi barbeque Chef, Steve Polk.

It kicks off early Friday morning when participants prep the grills and marinate the pork. Then, the cooks just watch and wait.

“Pork shoulders will cook about 20 hours for us and the ribs will cook about 6 hours,” said Polk.

Polk says there are some secrets to success, like having something unique.

“Barq’s root beer originated in Biloxi and so we use Barq’s root beer, we spray all of out meats with Barq’s root beer as they cook,” said Polk.

While the competition is a lot of hard work, it’s also a time to enjoy the events the weekend offers.

“This is our chance in the Spring to get together with family and friends and the kids love it because you get to get all the sports all in one. You get football, softball, baseball, everything all in one.”

The judging for the competition is Saturday at 9 am.
