COLUMBUS, Miss. – (WCBI) David Wilkerson is more than just a chef. As an alumni of the culinary program at EMCC, he is now using his position at Lion Hills to pass on his kitchen knowledge.

“All of the students who are going through the culinary program at EMCC, as well as hotel and restaurant management. They do their supervised work study program in here, which is like work study,” says Wilkerson.

So, he tossed me an apron and a pair of gloves so I could learn how to prepare a cajun stuffed pork tenderloin. We began with a piece of butterflied pork and his famous andouille sausage and shrimp dip, that with bread crumbs, he has turned into stuffing.

Once the tenderloin was stuffed, Chef David uses a technique called trussing to hold everything together. Roll it through fresh, homemade cajun seasoning, and voila!

For Chef David Wilkerson, cooking food that is sure to satisfy any taste bud while teaching the next generation, is just one more day in the life.
