Sheet Pan Chicken Fajitas

Sometimes I’m craving a little mexican food, but I don’t want to pay extra money or even leave the house.  With this recipe, I can stay at home, enjoy authentic flavors and save a few bucks by having plenty of leftovers!

Seasoning Mix:

2 tsp chili powder
1.5 tsp ground cumin
1 tsp ground paprika
1/2 tsp coriander
salt and pepper
Fajita Ingredients:
1.5 lbs sliced chicken breast
3 colorful bell peppers, sliced
1 medium yellow onion, sliced
2 cloves garlic, minced
3 tbsp olive oil
2 tbsp fresh lime juice
3 tbsp chopped cilantro
Directions:
1. Preheat oven to 400 degrees
2. Mix all seasonings together, set aside
3. Spread peppers, onion onto lined baking sheet
4. Top with chicken strips, sprinkle garlic/seasonings
5. Drizzle olive oil and toss.  Spread evenly
6. Roast in oven, tossing halfway for 18-25 minutes
7. Drizzle with lime juice, cilantro and more salt, toss
8. Serve warm with desired toppings
