Meteorologists in the Kitchen!

Our entire team of WCBI Meteorologists came into the kitchen to cook for us!  Here’s what they came up with for the holidays!

Italian Popcorn: Chief Meteorologist Keith Gibson

Ingredients:
2 qts. popped popcorn
1 stick butter
1 T Italian salad dressing seasoning
1/4 C cooked bacon pieces
1/4 C grated Parmesan cheese

Directions:
1. In a large bowl, combine bacon pieces and popcorn.
2. Stir salad dressing into melted butter.
3. Pour over popcorn and toss.
4. Sprinkle with cheese and stir
5. Pour into long casserole dish
6. Bake at 300 for 15 minutes.

Christmas Morning Sausage Balls: Meteorologist Alex Puckett

Ingredients:
2 C biscuit mix
1 lb. sausage
2 C sharp cheddar

Directions:
1. Combine in large bowl, mixing by hand.
2. Shape into balls, about the size of a ping pong to golf ball.
3. Bake at 350 for 15 minutes.
4. Serve with jelly or stone ground mustard.

Mac and Double Cheese: Meteorologist Jacob Riley

Ingredients:
1/2 lb. macaroni, boiled and drained.
3 T unsalted butter.
8 oz Velveeta cheese
6 oz Pet milk
1 C sharp cheese, shredded.

Directions:
1. Boil and drain macaroni.
2. Add 3 T. unsalted butter.
3. Place in greased casserole dish.
4. In microwave, melt Velveeta with Pet milk.  Stir.
5. Pour over noodles in casserole dish.
6. Top with 1 C sharp cheese, shredded.
7. Bake for 30 minutes. Can be cut into squares.

Gramma McGee’s World Famous Chocolate Chip Cookies

Ingredients:
1 C – Softened Butter
1 C – Brown Sugar
1 C – Sugar
1 tsp – Vanilla
2 Eggs
2 C  – Flour
1 tsp – salt
1 tsp – baking soda
2 C – Quick Oats
6 oz – Chocolate Chips
1/2 C – Chopped Pecans
1/2 C – Coconut Flakes

Directions:
1. Cream butter, eggs, sugar and vanilla.
2. Add flour, salt, soda and mix.
3. Add oats, nuts, chips and coconut and mix.
4. Split dough into two portions.
5. Roll into two logs, freeze overnight.
6. Preheat oven to 375 degrees.
7. Cut dough into 1/4″ slices, bake 8-11 mins.
8. Cool five minutes before serving.
