Video: Many People Are Choosing To Have The Professionals Cook Their Thanksgiving DayTurkey

STARKVILLE, Miss. (WCBI)-Thanksgiving is just two days away, and for many catering businesses this week is crunch time for them as they try to prepare several turkeys for families to enjoy on the big holiday.

Brian Michael’s Catering Company  said the calls have been rolling in non stop with people asking to have their turkeys pre-cooked for this Thanksgiving.

But they expected this heavy rush.

The company said they started preparing for this rush three weeks ago, and so far they’ve already rolled out over one hundred delicious turkeys for several families to enjoy.

“The customers around here, we have people come from Amory, Tupelo, and even Alabama to come and get our turkeys,” said Brian Linder, owner of Brian Michael’s Catering Company.

The demand for turkeys has been extremely high this holiday season.

In fact, in the eight year’s that he’s been in business, Linder said this year he’s seen an increase in the number of families preferring to leave their turkey cooking to the professionals.

“Yea I’ve noticed that they’re coming to outside folks like us to prepare their turkey, and a lot of people are doing their own sides but they’re getting their turkeys from us,” said Linder.

And the chef has an idea on why that is.

“Time,” he explained.  “A lot of people don’t have time and the turkeys are the thing that take too much time away from the rest of the family and stuff so they’re going to let us do the more time consuming things.”

The catering company fries and smokes it’s turkey, however, one choise is definitley growing in popularity.

“Well this year fried turkeys are leading the group,” said Linder. “On fried turkeys we do a creole butter we inject it with, and then our smokes turkeys we put some butter underneath the skin before it hits the smoker. We smoke it for about 11 or 12 hours and we spray it periodically with orange juice and apple juice to get it juicy and moist.”

Linder said Wednesday is going to be the busiest day of the season, because the majority of customers pick up their turkeys the day before Thanksgiving.
