Carbonated water rising to become multi-billion-dollar industry

The carbonated water business is surging as more Americans turn away from soda and other sugary drinks. Sales of seltzer, club soda and sparkling water are up by double digits. They now total at least $2.2 billion a year. Bon Appétit editor-at-large Andrew Knowlton shows us how new flavors and products are raising its status.
