Bacon Wrapped Venison Tenderloin

Law enforcer, spiritual leader, author, husband, and father. West Point Police Chief Tim Brinkley wears many hats.

After spending 26 years working for the Mississippi Department of Wildlife, Fisheries and Park, he took over as the top cop in West Point in 2011.  An avid outdoorsman, the chief hunts and fishes – and loves to grill.  Here is one of his favorite dishes.

Bacon Wrapped Venison Tenderloin

Ingredients:

Venison tenderloin

Salted water

Vinegar

Bacon

Dale’s

toothpicks

Instructions:

Cut tenderloin into bite size pieces.

Add tenderloin to salted water, with a little vinegar. Soak overnight.

Drain and rinse.

Marinate rinsed tenderloin in Dale’s seasoning sauce overnight.

Cut bacon into 3-4″ strips. Wrap tenderloin piece in one strip of bacon. Secure with toothpick.

Place on grill. Season with black pepper. Grill until bacon is cooked through.
