BBQ Chicken & Roasted Sweet Potato Bowl

Here’s a delicious recipe that is healthy, delicious and a twist on a southern classic!  While it might sound like a strange combination, the sweetness of the potatoes with the tangy barbecue sauce is a hit!

Ingredients: 
2 medium sweet potatoes, diced
1 large yellow onion, diced
2 tbsp olive oil
1/2 tsp salt, divided
1/2 tsp garlic powder
1/2 tsp. chili powder
1 head broccoli, diced
1 lb chicken breasts, sliced
1/2 c BBQ sauce, divided
Instructions:
1. Preheat Oven to 400°
2. Toss potatoes, onions with 1 tbsp oil
3. Season with spices, stir
4. Pour onto lined cooking sheet
5. Bake for 20 minutes at 400°
6. Push to one side of pan
7. Toss broccoli with oil, pour on pan
8. Add chicken, brush with sauce
9. Cook 15-20 minutes at 400°
10. Shred chicken, arrange all in bowl
