Beef Taco Casserole

Sometimes you crave Mexican food and sometimes you just want to stay home and not go out!  This helps you make the best of both!  Jacob’s Beef Taco Casserole is great for both the kids and the adults, and you can serve it many different ways!

Ingredients:
1lb ground beef, cooked
1 package taco seasoning
1/2 cup water
1 green pepper, diced
1/2 onion, diced
1 can pork and beans
1 can black beans
1 can fiesta corn
1 can cheddar cheese soup
1 cup milk
1 cup shredded cheese
assorted spices

Steps:
1) In a bowl, mix together your ground beef, water and taco seasoning.  Stir until mixed.  Pour in bottom of crock-pot.
2) Add all other ingredients into the crock-pot.  To make it thicker, drain your canned goods before pouring in.
3) Cook low and slow for 5-6 hours.
4) 15 minutes before serving, add your shredded cheese.  You can either mix it in or cook it on high for 15 minutes to help it melt.

Ways to Serve:
Soup: use a soup spoon and put into a bowl.  Add toppings such as chili-cheese corn chips, sour cream and shredded cheese
Casserole: use a slotted spoon to help strain some of the liquid.  Serve with toppings and a side of vegetables
Tacos: serve with your favorite tortillas/shells and load up with the casserole inside.  Serve with your favorite toppings
Salad: use spinach/lettuce and put some casserole on top.  Mix together before adding your favorite toppings
